High Peaks Distilling, nestled in the Adirondack town of Lake George Village, is a small-batch distillery crafting quality whiskeys, bourbons and ryes. Founded in 2016, the family-owned and operated business is dedicated to bringing exceptional whiskeys and spirits to the Northeast.

High Peaks Distilling is serious about quality - their whiskeys are carefully crafted with pure spring water from Lake George and a special proprietary blend of grains. The barley and rye used in their whiskeys come from local farms. The distillery is also committed to sustainability, using all-natural, locally sourced ingredients and solar energy to power its stills.
Visitors can stop in for a unique experience in High Peaks Distilling Tasting Room at 1 Canada Street on Saturdays from 1 pm to 4 pm.

When you visit, don’t miss the distillery's Cloudsplitter Single Malt Whiskey. With notes of dried fruits, cherry, baking spices, nutmeg, vanilla, and caramel, it’s been recognized internationally and won numerous awards in major spirits competitions.
Or, try their Landrace Empire Rye Whiskey, distilled from 100% local landrace rye, an ancient pre-hybridized variety of rye that flourished since time immemorial in New York State. Landrace Empire Rye is aged for at least two years in charred, new oak barrels and delivers an exciting big, bold, spicy start and a delightful tongue tingle with notes of earthy spice, anise, pepper, grassy turmeric, and charred oak.

High Peaks Distilling was founded by John Carr in 2016 after decades of brewing at Adirondack Brewery and perfecting the complex art of malt fermentation.
Carr did his homework, making several trips through Scotland's legendary Whiskey producing regions. He became obsessed with replicating the traditional copper pot stills used in Scotland in his distillery in Lake George.
He contracted with JBF Stainless in Utica, New York, to build a still with “..a tall, slender column allowing conversation with the copper and resulting in a clean, light spirit.”

High Peaks Distilling is more than just a craft distillery; it's part of the local community. The distillery hosts free tours and tasting experiences that offer an in-depth look at the process of making spirits. They also host special events throughout the year, such as their annual Christmas Tree Lighting event.
